Honeycomb

Some kitchen science with a tasty treat at the end!

What you need:

  • water
  • sugar
  • honey
  • bicarb soda

What to do:

  1. Put 2 tablespoons of water, 2 tablespoons of honey and 3/4 cup sugar in a saucepan.
  2. Put it on a high heat, but do not stir it. Let it boil.
  3. Once it starts to turn golden-brown, remove from heat.
  4. Add 1.5 teaspoons of baking soda and whisk. Stop whisking when it starts to rise.
  5. Pour the mixture into a tray lined with baking paper or foil. Do not stir it or tap the tray, as this will remove the bubbles.
  6. Allow to set. Once set, break into pieces and enjoy.

What happens:

The bicarb soda causes carbon dioxide to be produced. This is a gas, so it forms bubbles in the mixture, giving the texture.
